Zesty Lime Sugar Cookies

Another Sunday, another batch of cookies. The rainy weather left me feeling a little un-inspired this weekend. The lemon sugar cookies that I made a few weeks ago were such a big hit with my coworkers, I decided to experiment with limes today. I almost did a combination of lemon-lime but I wasn’t feeling that ambitious today. I eat this chobani yogurt from time to time that has key lime greek yogurt with graham cracker crumbs on the side. I am thinking after this lime experiment, I might try to do some variations on key lime cookies with graham crackers or white chocolate chips. But for today, I kept it simple.

Ingredients:

  • Zest of 2 limes
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, at room temperature
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons fresh lime juice (approx. the juice of 1 lime)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar for rolling cookies

Step 1: Preheat the oven to 350 degrees. Cream together butter and sugar. Add in egg and vanilla and mix until well incorporated. Zest two limes and add the zest into the batter along with 2 tablespoons of fresh lime juice – that was about the juice of one lime for me.

Step 2: In a separate bowl sift together the flour, baking soda, baking powder and salt. Add into the wet batter and mix until incorporated.

Step 3: Using a cookie scoop, roll even-size balls of dough in granulated sugar and press down lightly onto a sil-pat or parchment-lined baking sheet. Bake at 350 degrees for 8 to 10 minutes.

These are delicious. A little crunch from the sugar on the outside, but nice and soft and chewy on the inside. The lime is really refreshing and these cookies are just exploding with fruity flavor. I already have a good idea in my head for a fruity cookie next weekend.

This weekend was just a good weekend for relaxing. The weather today was cruddy but yesterday the sun came out and we had a stellar sunset. This was the view from the dock on Saturday night on the lake. You just can’t get tired of this sunset. The sky was on fire that night, and I sang the theme song from The Lion King pretty loud on the back porch as the sun went down because it seemed appropriate.
