Funfetti Cookie Bars

We’re officially in February again, which means the New Year’s resolutions to eat healthier are long gone. I’m pretty sure we got a free pass this year with the pandemic anyway. Either way, I’m here bringing you the sweetest and simplest recipe to support a great cause. These four-ingredient frosted Funfetti Cookie Bars are ready in less than an hour, and are proof that you can have your cake and eat it too … in cookie form. I’m so excited to participate in the 2021 Good Cookie Food Bloggers Valentine’s Event event (again) with this recipe. This is the fifth year for our event and we want to continue to make a difference in the fight against pediatric cancer.

Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number and that’s why I got involved. And with the ongoing pandemic, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research.

Now onto this delicious easy recipe. Funfetti Cookies have always been, and will always be, one of my favorite OG recipes to whip up. I hate making cakes, but love any vehicle for frosting. I wanted to make a version of Funfetti Cookies that didn’t require several cookie trays to roll out, bake and frost. These bars are the perfect balance in between a cookie and cake. I recommend under baking them just slightly to get the gooey cookie base. Then add as much frosting as your heart desires, slice and they are ready to go. Easy, breezy, beautiful, Funfetti Cookie Bars. 

Funfetti Cookie Bars

Funfetti Cookie Bars

Cook Time 20 minutes
Additional Time 15 minutes
Total Time 45 minutes

Ready in less than half an hour, these frosted cookie bars are a sweet treat for your Valentine.

Ingredients

  • 1 box (15.25 oz) Pillsbury Moist Supreme Funfetti cake mix
  • 1/3 cup vegetable or canola oil
  • 2 eggs
  • 1 (15.6 oz) container Pillsbury Creamy Supreme Funfetti vanilla frosting

Instructions

  1. Preheat your oven to 350 degrees F. Line an 8x8 baking dish with parchment that covers the bottom and sides, and spray lightly with nonstick spray.
  2. In a large mixing bowl, use a wooden spoon to combine Funfetti cake mix, vegetable oil and eggs. Mix just until the dry ingredients are incorporated.
  3. Move the dough into the prepared baking dish. Use your hands to lightly press down the dough to even it out. Bake at 350 degrees for 18 to 20 minutes, or until the edges are lightly golden. I like to under bake slightly for a chewier, less cake-like cookie bar.
  4. Let the bars cool for about 15 minutes, and then carefully use the parchment to lift the bars out of the baking dish onto a cutting board.
  5. Use a spatula to evenly frost just the top of the cookie bars before cutting them. I used about 3/4 of the can of frosting. Top with sprinkles.
  6. Use a large sharp knife to cut the bars evenly into 12 squares and enjoy!
