Muddy Buddy Double Chocolate Chip Cookies

After many requests to post my recipes, I’ve finally gotten myself together enough to start measuring, writing things down and taking photos of my baking experiments along the way. The Muddy Buddy Double Chocolate Chip Cookie recipe is a good example of seeing if mixing two baked good desserts (muddy buddy aka puppy chow and double chocolate chip cookies) tastes just as good together as they do on their own.

I consider myself the Rachel Ray of baking only in the sense that I’m a bit of a hot mess in the kitchen and don’t typically measure things. A handful of this, a few spoonfuls of that is much more my style of baking, but I’m trying to get better at documenting so that these are actual recipes. So bear with me while I get used to adding process to my favorite hobby.

Step 1: Make some muddy buddy or puppy chow.

Ingredients:

  • 9 cups crispy rice cereal squares
  • 1/2 cup peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups confectioners’ sugar

1. In a saucepan over low heat, melt the chocolate; add peanut butter and mix until smooth.

2. Remove from heat, add cereal and stir until coated
3. Pour powdered sugar into large plastic bag, add coated cereal and shake until well coated. If you are going to make the cookies right away, put this in the freezer for a bit.

Step 2: Make double chocolate chip cookie dough

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter or margarine, softened
  • 2/3 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips

Cream together the butter and sugars. Add in vanilla and eggs and mix well.

I’m not a fan of sifting flour, but cocoa always tends to be a little chunky, so in a separate bowl sift together the remaining dry ingredients.

Add in the chocolate chips. Then add in 5 cups of the muddy buddy mix right into the mixer and mix on low until it is incorporated. I added in 7 cups to mine and it made the mix a bit too dry.

Scoop even teaspoon size balls onto a tray and press lightly with your fingers.

Bake at 350 for about 12-14 minutes. I tend to underbake my cookies a bit, and leave them to sit on the tray for a few minutes when they come out of the oven to harden.

The finished product! Muddy buddy double chocolate chip cookies. If I made these again, I would use a little less of the muddy buddy mix, but I will let my trusty guinea pig coworkers be the judge of this experiment tomorrow morning.
